Peter, this time of the year everyone is making fresh or dried sausage. if you go to a spice store they will carry it. it may also be called Instacure #1. most places that supply the meat and casing may also carry it. our spice store here carries it all year long.

Prague Powder is a salt that has Nitrite bonded to it. Nitrite is what helps keep the hams pink and discourages the growth of undesireable types of bacteria, the botulism one being the worst.

Tender Quick is a product put out by Mortons that is a salt with both Nitrite and Nitrate bonded to it in the amount of 200 parts per million. they also put out a sugar cure.
