What about that Pig Pie I told you about? I ran it past a few others and they think it's something to slap on the 'to try' list! It's basically what you're making anyway, but you won't have 5 different containers to carry.....
For those who haven't heard this one, I picked it up from an online website devoted to southern home cooking and it's like a layered casserole, but it has everything you'd cook for a bbq dinner!
Pig Pie
1 layer of crushed Frito corn chips for crust (maybe mix with some butter so it binds?)
1 layer of baked beans
1 layer of pulled pork
1 layer of bbq sauce
1 layer of shredded cheddar cheese
1 layer of cole slaw
Your favourite rub to season on top if desired.
There ya go; a whole bbq meal in one dish!
There were no 'cooking instructions' with this recipe, so I'm not sure if you bake it, or just assemble it when meat, beans and sauce are warm, or, my idea, would be to assemble first 5 layers, heat in the oven til cheese melts and everything's warm, remove and add the cole slaw last (cold).
One dish, all the goodies in the pie, sounds like a plan, I tell ya Rog! I think the butts are still on sale at A&P too!
