Yeah, the recipe for the bacon is easy and doesn't require a lot of fridge space! Temps are cold here the last couple days, but last week was quite mild. You should talk to BBBrown; he too is back building a cooker. This one won't be as elaborate at that big one you've probably seen pictures of on the homepage! It's for a neighbour of his who owns a restaurant and does pig roasts there occasionally.
I was talking to Graham Jones (GJ on the forum) who's also from London, and we might get some fresh boneless pork loins and split a batch of peameal bacon. (For those interested, Sobey's has fresh, boneless loin roasts for, I believe, 2.69/lb which ain't too shabby if they are indeed fresh, and not 'seasoned' with saltwater solution!)
