Thanks for the input, Reg. The book I was reading is a 1975 publication and I think was written during the beginning of the controversy around nitrates in food.
It doesn't say that nitrates in quantities within USDA and FDA guidelines are "bad", just that some folks don't want nitrates in their food.
Their suggestion that ascorbic acid can be used in place of nitrates caused me a bit of difficulty and you gave me the statement I needed to hear to make my decision.
The ascorbic acid thing was probably to keep the tree huggers happy! LOL
