Subject: Blueberries

Hi everyone! Blueberries are in season and this is a blueberry salsa recipe I found. I've made it before and couldn't resist sharing it with this board for our collective edification. LOL. I'm making it again this afternoon.

2 cups fresh blueberries
1/2 medium red onion, diced
2 jalapeno peppers, seeded and minced
1 red bell pepper, cored and diced
3 tbs coarsely chopped fresh cilantro
1/4 cup fresh lime juice
1 tsp kosher salt


Coarsely chop 1 1/2 cup of the blueberries then mix with the rest of the ingredients and the remaining whole blueberries. Let stand at room temperature for one hour to allow flavors to blend then serve.
