Dome temp at around 235-240 this time, which should translate at 220-230 grid temp using hickory and a coule chunks of pecans left in my water bowl from earlier smokes. It's about 10-15 degrees higher than what I'm accustomed to, Reg. Hopefully this should do the trick.

Earl, there is a store I have in mind near where I live and it maybe it. It's called "Les Délices du Marché". They sell delicacies from around the world but they also have taken over a Caribbean spice shop next door. They have an interesting selection of hot sauces which you can't find elsewhere in the city. Could be them. E-mail me what you're looking for and I'll look around for you.

BTW, I ran out of cider vinegar for the Smoke and Spice sop, couldn't find any in my cupboard this morning so I used regular vinegar and added apple juice and it seems to work.
