Bryan had posted below about the goose breasts he got from a guy at work; you had suggested a goose/pork butt blend for sausage. Guess what? Lucky me got some of those goose breasts from Bryan and I wanna do some o' that sausage. The breasts are frozen, but I was thinking of doing about 3 or 4 of them in the sausage mix. How much pork butt will I need? Spices? I have a food processor, but no grinder plate or anything. Can I find a good consistency just through pulsing the processor? Think I'll just make patties out of the meat, so casing is a non-issue. Any recipe suggestions, mixing etc?
