Subject: Reg---re: Fresh Pork

Good morning, my A & P didn't have the pork special last week but I expect it will be coming soon. I was reading the recipe last night and have a couple of questions. What is the reason for using filtered water and does it matter what kind of brown sugar is used?
It's going to be an interesting experience with fire control in the offset but should be manageable.
I'm looking forward to getting started and to hearing from everyone else who has started already.
Thanks for sharing, Reg.

Peter
