hi Barry, it really depends on how much you are charging. couple things we need to know, are you serving another meat and how many sides. i take it you are cooking full slabs of side ribs which will give you 13 bones. i will guess that each rack will serve 3 people with sides.

i priced a small party not long ago using Danish back ribs weighing about a pound each. cost is $6.50 a lb. priced two sides with it at $14.95 per head thinking 3/4 lb per person.
