hi Gerry, sorry i did not get a chance to get back to you yesterday. usually i do the eggs at a very low temp using a hotplate for the heat source and smoke producer. if you get to much heat the eggs will get rubbery. hard boil the eggs and take the shells off. roll two from the dozen in your favorite rub then smoke all for two hrs. cut the eggs in half and remove the yokes. combine the yokes and the rubbed eggs, chop and add your mayo for the filling. thats it unless you like to add hot sauce or something like that.
