well since the judges didn't like it here you go. brine 6 hrs, rinse and pat dry. apply a light coating of saltless rub. cooker running at 275 with no water in the pan, cook for 55 minutes. use only a light smoke. after 55 minutes start spraying with your finish glaze. as you know i used prime skinless boneless thighs. the glaze consists of 3 parts mulled icewine jelly,(home made) 3 parts BBQ sauce, 1 part lemon juice, 1 part apple cider vinegar. continue sraying every 5-6 minutes with the glaze until you reach the internal of 165.
