I just had a small smoke today... 4 chickens over apple wood as my contribution to the family's Easter dinner. Usually I use Maple Leaf Prime for chicken, but Costco has switched to Lilydale. Didn't seem to notice much of a difference between brands. The Lilydale birds seem slightly paler in colour.

I brined them overnight, then inserted a strip of bacon in the cavity and smoked for approximately 5 1/2 hours, letting them rest for 1/2 hour before deboning.
They turned out very tender and tasted great.
