Subject: Maiden voyage for my WSM -Ottawa Canada !

Ribs were in the WSM for 4 hours and 10 minutes.

One image refects a very high temp.... the ribs were NOT in the smoker at this point....... I put them in when I got the temps down to 250 degrees.

Anyway have fun viewing the images.

I slathered some "Diana" brand bbq sauce on the ribs after I takes 2 of them without the sauce, meat was nice and smokey and very tender. I do like lots of sauce on my ribs though.

Anyway a really great experience !

I put a Dizzypig brand rub on my ribs. If anyone has never tried that brand, it's great, I've never smelled aromas like that coming off of a mixure of spices like that, they are so fresh and just come out and bite your nose, - they really are that fresh. Anyway great stuff !
