good stuff Earl. i'm still learning plenty about this cooker but getting there slowly. still preburning the loads of briquetts in a pot before adding to the firebox. i tried adding preburnt coals to fresh unburnt (Minion Method)and noticed a distinct unpleasent flavor in the chicken a few weeks back. this is not for me i can tell you. i have also noticed this taste with the WSM when using the same method. if i use lump the crap taste is not there at all.

the ribs and chicken in yesterdays cook were very good and i'm not sure if its me or not but the ribs seem better then off the WSM. like i said maybe just me.

i will be going to Paris early on Friday the 7th and be there around noon so i will see you guys then.
