I am assuming you are addressing your question to the bbq portion of the event, as there is also a historical farm show involved in the festivities as well.......
For the bbq: teams should start showing up/setting up around noon on Friday. Friday's activities will include setting up tents, canopies, setting out tables etc and then later in the evening, prepping the whole hogs for cooking. There is talk of an informal cooks' dinner among the teams with everyone pitching in some specialties. The hogs will go on sometime during the evening/night Friday.
Some teams will all stay on site, other locals take shifts watching the hog cooker. Saturday is the main day with cooking and turn-ins running from about noon thru til bout 2-3 pm. Judging happens after that, with awards ceremony at 5, if I'm not mistaken. In a nutshell, to see cooking going on, best be there before 2-2:30. To catch awards ceremony, 5 is time to be on site. Teams usually pack up between last turn-in and the awards, so most depart soon after ceremonies.
