yes Bruce you are making sense as far as i'm concerned . i have been reading a lot of forums lately and tons of different recipes and it seems like we/they everyone is in such a hurry to find new recipes and methods that we are forgetting about the actual taste of the meat . i know they are growing animals different these days , much leaner , less fat = less taste re the need for rubs and brines , but it seems to me everything is getting so exotic that we are starting to loose the original intent , BBQ .
