Baron of beef is made with the inside round. It does not have much fat marbling so if not careful you can turn it to shoe leather. I cook them lots and will do them on a shelf under prok butts, that way they are constantly basted. Cook til the center is about 138 F, remove and cover. Let sit for 30 to 45 minutes to let the temp even out (should go up to about 145 f)and finish cooking. Slice thin and enjoy.
