I didn't ask about the temp, sorry. As for steaming, you just steam it regular, no pressure. The way I do it is I use a large pot and rig my pizza tray on top of it -it's one of those big round metal tray full of holes used to bake pizza. I put the brisket on it and cover with foil and poke a few holes on the top and presto, a homemade steamer for brisket.
