7 hrs into this cook and i'm surprised when i changed everything around ( top to bottom ) the bottom butt was at 168 already . running at 245 - 255 pretty well all day and didn't expect this temp this soon with that much meat in there . hope to bring it down to 220 for the next 15 to 20 degrees . reg
