you can overcook the ribs and still get away with it . yesterday we all got caught up with the beer and the chatter but the ribs ended up a little overdone . threw them into some foil pans , sauce cut with apple juice and back into the WSM for 30 min . removed them and back on to dry a bit . not the best ribs in the world but got by with them , there's none left . reg
