I have a suggestion for making a simple, yet very good dry rub or brine for salmon.
1/2 cup salt
2 cups brown sugar
sprinkle with garlic pwder and pepper.
Rub lightly on skinless salmon fillets or strips and refrigerate. The dry brine removes moisture from the flesh creating a natural brine.Brine overnite, turning occasionally. Pat dry and place on racks, then place in the wind in front of a fan until a sticky surface appears on the salmon. Smok with alder or apple chips. Very Good!

Very simple, yet better than any brine I've used yet.
