hiya Peter. just sitting here thinking what they have at my local deli. corned beef and pastrami, both cured and smoked lean cuts of meat. roasted beef for slicing thinly. why can't you do the same things using the brisket for the pastrami and corned product. you can also brine-inject any lean cut for smoke roasted, thinly sliced piece for a sandwich. whatever they do from beef can be done with venison using the same cuts.
