When we did the one Christmas day, it was about a 10-12 lber. We started it at 350, since it was still a little chilly in the centre. Had a loose foil tent over it, and I put the Taylor probe in too. After about a half-hour, we cut it back to 325, and cooked until it was 155 breast, about 3 hrs. At that point we removed foil, basted, then let go the last 10 degrees to 165 breast without cover. Browned up nice at that point (had to put some foil on legs as they really were cooking up). Total time was about 3.5 hrs, so about 20 mins/lb at 325 the majority of the time.
Maybe Reg will be along with a more effective method, but this worked out just fine for us!
