If I may add my thoughts here, I have always followed the less is best school or the KISS principle. I am looking for the one or two rubs, marinades, sauces that I can stay with. My goal is to do only what will bring out the flavour without adding a new one.
I got my brisket on, it's too early for wobbly pop, so I may as well become a philosopher for a while LOL.
