Sorry to hear you can`t make it Reg, I hope you have a good time at the wedding, eat up and drink up eh!

Reg, just a little blurb on the oil thing, that steak that I have in the marinade, like I said, I have always used veg oil in the past for this dish and since I used the olive oil I have noticed that the oil congeals sort of, almost a 'wax' like state, its strange, I have never seen oil do this before, in other words the oil is trying to solidify.

I turn the meat frequently to help with the marinade process and find that I have to mix the oil and ingredients back together.

I`m not so concerned that the oil is doing this as much as I am that its not marinading and tenderizing the meat properly for a tender end result.

Flank is a tough ole chunk of beef but when marinated it will melt in your piehole.
I just don`t want to ruin the meat, whats Mike going to eat...LOL

I just wondered if this has happened to you with the oil doing this?
