Thanks for the warm welcome and the fantastic info. You can bet you'll find me hanging around here quite often. I've been to the website and I'm looking forward to perusing it more thoroughly when I have more time. My Membership application will be in the mail today.

Mop, you had asked about my cooker. Currently and for the last few years I have been using an el-cheapo Sunbeam water smoker that I got on clearance at a warehouse sale. It's this little unit along with an article in the Toronto Star a few years ago that started me on this crazy hobby. I have modified my little Sunbeam by replacing the firepan with a charcoal grate, making a ring so I can pile the charcoal up, drilling a thermometer hole in the dome at grill level, and sealing most of the seams with aluminum tape. If I decide to try this competition thing, my plan is to ask my wife for a WSM for Christmas. I'll need the better temperature control the WSM offers, but I hate to give up my Sunbeam, mostly because it has a ful 22 1/2" surface vs. the WSM's 18".
