Try this, it will blow you away:
Marinate for 2 days submerged in:
3 parts red wine
1 part soy sauce
1/2 cup (only) canola oil
1 TBSP lemon juice
Plenty of chopped garlic
smoke over low coals and oak at about 250F
appx 2 hr/2lb to 150F
Unbelievable!
