Hi Ron , not knowing to much about brisket since i have never done one , but i did hear someone say they smoke it until it reaches 155 , then remove and wrap in foil , put it back on the smoker until it reach's 195 . then remove and put in a cooler to "Set" . i'm pretty sure it was one of those longhorns from Texas i heard that from . reg
