Guess what everyone? Got me a new WSM this morning!!!!!! Can't use it today though. Argh. Got to go here, got to go there etc. But tommorow, chili marinated chicken. I heard the new WSMs have a tendency to run 40-50 degrees higher than normal until you've used them a few times. So chicken's a good start. Anyway, before I begin to ramble on I have a question:

The guy at Réno-Dépot (Québec's version of Home-Depot) swears by Maple Leaf charcoal, not the briquettes but the chunky stuff. He said if I didn't like it I could bring it back for refund. Talk about faith. I then told him it was for smoking not grilling and I needed 3-5 hours of burning, he didn't know about that (not very many smokers in Montreal. I'll be one of the very few). Any advises??
