Hey all! Anyone wanna reallllllly good Pasta e Fagioli recipe?

This is from Top Secret Recipes and is supposed to mimic the Olive Garden recipe. But, I think its BETTER.

1 pound ground beef
1 small onion, diced
1 large carrot, julienned
3 stalks celery, chopped
2 cloves garlic, minced
2 14.5 oz cans diced tomatoes
1 15 oz can red kidney beans (with liquid)
1 15 oz can great northern beans (with liquid)
1 15 oz can tomato sauce (or puree .. I prefer the puree)
1 12 oz can V-8 juice
1T white vinegar
1 1/2t salt
1t oregano
1t basil
1/2t pepper
1/2t thyme
1/2 pound little pasta (like ditali)-cooked until al dente

Brown teh ground beef. Drain most of the fat. Add onion, carrot, celery and garlic and saute for 10 min. Add all remaining ingredients, except pasta. Simmer for 50 minutes. Add the pasta. Simmer for 5-10 minutes and serve.

This is delicious! I'm making it for lunch today, and I can't keep my spoon out of it as its simmering! lol
