Although I make an opposite prediction on another thread, That Erasmus, will become an unexpected ally in Dune 7, it does seem that Erasmus is becoming like an organic because of his separation from the Evermind. It has allowed him to grow and progress. I can totally see him becoming as powerfulas a Tyrant like Leto II because he has progressed so long and become so organic that he can mimic powers of emotion and prescience.

The one thing I find illogical is that he would want to completely destroy humanity. Even Omnius realizes that fighting humans and that totally exterminating them is inefficient.

So either A: Gilbertus betrays Erasmus and hurts his feelings to an extent that he wants revenge on all humanity.

B: His separation from the Evermind has only made him more illogical and torturous and he just wants to kill humans.

or C: That he thinks humans will wipe him out if he doesn't first and he simply tries to destroy them because he is trying to survive which is what he does in the Machine Crusade.

That's interesting about Dune 5 and 6 mentioning him. I'll have to check that out.
