At the moment in the book the choice is presented to Paul, he actually feels absolutely nothing for his father and is shocked by it. His mind has become completely logical and calculating like a mentat and he can't even mourn for his father. So Revenge and hate doesn't even enter the picture.

Also, he DIDN'T want the Jihad. He says, "Surely I can't choose that path." And then he realizes that the path of Jihad is what the Bene Gesserit Siters really want because it was the tried and true method of forcing humanity to change. He goes for it because it is the better alternative for some reason to the future where he confronts the Baron and embraces his Harkonnen ancestry.
