I have a number of friends that are vegetarian, including some that are the strict Vegan kind. Not for me, but I don't mock the lifestyle.

If I were you and you had your choice of any of the venues, I'd go for the one in Union Square. Just a cooler neighborhood than the others -- and just up the road from Greenwich Village...where you'd also be able to find a lot of vegetarian options. Pretty much most of NYC restaurants at least have a couple of vegetarian options that are more than an afterthought.

However, the Zen Palate on Ninth Avenue is about midway between your hotel and the PA bus terminal
