Willow in Doppelgangland says of her vamp self "And I think I'm kinda gay." Buffy says something to the effect of "That's not you, there's nothing of you left in the vampire."

To which Angel responds, "Actually, that's..." then he thinks better of it and finishes "true."

And of course we find out later that willow's true nature is to dig the women.

But the show also did always undercut "soulism" at the same time. Clem's a good guy. Did he have a soul? Spike repeatedly has reasonably acceptable consequences if not good intent without his soul. What's the story with Anya? She chooses to stop being a demon in Selfless. Did she have a soul or not? Buffy was ready to kill her either way. Plus, even when Angel had his soul, he was lame, his hair stood straight up, and he was bloody stupid.
