Subject: Chili recipe

Every year our office has a chili cook-off. Here is this year's winning recipe:
2014 LAV Chili WINNERS (O’Conner/Austin) Recipe:
3 strips bacon
2 onions, chopped
2-3 TBSP minced Garlic
1 Red Pepper - chopped
1 Yellow Pepper - chopped
1 Orange pepper - Chopped
3 16oz cans stewed tomatoes
1 16oz can of tomato sauce
2 4oz cans chopped green chili peppers
1 16-20 oz bottle of medium hot salsa.
2-3 Bottles domestic beer. PBR used for this recipe.
2 TBSP Paprika
9 TBSP Chili Powder
4 TBSP Ground Cumin
2 TBSP white pepper
2 TBSP dried red peppers
3 TBSP Worcestershire sauce
3-5 TBSP Molasses
1 Package dry onion soup mix
3 TBSP Masa Harina flour (or ground corn meal)
2 Serrano Peppers (slice holes in them and throw whole into pot)
1 Fresh Jalapeno Pepper (slice holes in them and throw whole into pot)
2 Can Kidney Beans
1 Can black beans
1 PKG Corn (optional). Not used for this cookoff.
1.5 Pounds of Pork Butt or Loin
1.5 Pounds of Flat Iron Steak
MEAT RUB (Equal parts: Garlic Powder, Fresh Ground Pepper, Cayenne Pepper, Kosher Salt, Chili Powder)

Meat rub. Lightly coat both sides of meat (Pork and Steak) with all ingredients of meat rub and rub seasoning into the meat. Let stand for approximately 1 hour.
Fry onions and garlic with the bacon. Slowly add the chopped peppers and just heat them. Add everything else to the pot and slowly simmer. As the chili “heats” up to your taste, remove the peppers.
Over high heat, sear the meat (about 4-5 minutes per side) until rare. Remove and wrap in tin foil and let set for 10-15 minutes. Cut the meat into bite size pieces and add to chili.
