I've done this so many times and understand exactly what you mean about having cold hands. Sort this out now rather than on Xmas day in -20 deg ! Having done it with and without meters I now realize how useful a meter really is !You may find that a better LNB might help, (0.5 db or better still 0.3db), but concentrate on what you have to hand just now.

Never fear - If you can receive the Astra 2A/B signals you can not be that far off ! Make sure that the dish mount is very secure and aligned well in the vertical sense. Alos, make sure that the LNB support arm of your dish is correctly straight relative (90 deg) to the front tace of the dish and then align your complete dish for maximum strength and quality using the default vertical frequency for 2A/B. You can probably do this using either the basic Signal Strength Screen, or if you're really lucky and have a steady hand by looking for a received picture. 2A/B alignment requirements are quite sloppy, 2D is very much less forgiving ! If in doubt use a spirit level to double check that the dish mount (or vertical portion of the dish) is truly vertical.

To optimize for 2D reception you can use a Signal Meter, Claus Olhson or Biltema has some for 395 SEK, with the LNB 22KHz Tone set "Off" from hidden menu. [The tone forces Hi-band reception for 2A/B. As 2D is mainly low-band you'll need to Switch the tone "Off".] Using the manual tune menu is frustrating as the digi-box takes some seconds to respond to receiving a good signal strength and quality. Don't bother looking at the TV for 2D with the meter in-line as the meter attenuates the signal going through to the digibox.

Start looking for 2D reception on the meter by setting the 22KHz Tone in the digibox "Off" while having selected a Horizontal 2D frequency. Set the sensitivity high on the meter while doing this. You subsequently have to reduce the meter sensitivity the closer you get to accurate LNB alignment.

You'll find that you have to adjust the LNB in axial sense (fwd/back) relative to the front dish face and then in Skew.

Optimize LNB axial displacment to get the maximum signal on the meter (adjusting sensitivity down after each improvement in signal strength). Each LNB movement should be very very slight. Once you've found the optimum axial displacement, repeat the process concentrating on Skew. Again, each LNB movement is very slight. Once you've found the best position lock the LNB in place, remove meter from "in-line" and reset the 22KHz tone "On" and make a final Skew adjustment while concentrating on Signal Quality and/or none-pixellated pictures. After the final skew adjustment, lock the LNB in place. The whole process should take 30 minutes maximum if you have easy access to the dish/LNB. Good luck.
