Subject: tasty, yes; healthy, not so much

at the end of a long day in the cubicle last week, I treated myself to the following:

1/2 pound or so smoked sausage (could have used kielbasa, too), sliced into 1/2 inch thick slices
4-5 red potatoes, sliced and chopped into chunks
1 baseball sized red onion

combined all in my trusty cast iron skillet and browned over medium to medium low heat, as the skillet builds a lot of heat (I did cover the skillet for awhile to help cook the potatoes). seasoned with black pepper upon completion. took about 25 minutes although it seemed longer due to my hunger (which became more intense as the aroma of browning developed).

what should have been a supper and a lunch became a single meal.
