The memory of Gregor was so detached from the body of Gregor at this point that it was as if he had been gone for months. I don't know if they were so much bad mouthing him as realizing that the conditions they were living in were not very good. Granted it did take the death of Gregor, or rather the massive bug living in Gregor's old room, to realize that their condition could have been made much better, and Gregor wasn't actually holding them back. I think when Gregor was human that they had fallen into a sort of negative regularity where it was understood that Gregor was the head of the house, whether they liked what he did or not, much like how if your parents don't do things the way you want you become upset but often times it is best to keep quiet. Once gregor was gone...they had free will to speak, and choose their apartment.
