I was letting Grandma off the hook. As the matriarch of the family, she gets special consideration. Nuts sounds like a good idea to me!

As for macaroni and cheese - it can be southwestern! Here is my recipe for homemade mac & cheese, modified a bit to be "southwestern".

1 1/2 cups uncooked pasta
4 tablespoons butter, divided in two (2, 2TB chunks)
1/4 cup flour
3 cups milk
1 cup grated pepper-jack cheese
1 1/2 cups grated cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup soft breadcrumbs
1 to 2 teaspoons chili powder

Cook the pasta and set aside (try to keep it warmish, just toss a towel or something over it).

Melt 2 tablespoons of the butter. Add the breadcrumbs and chili powder. Toss it together and set aside. This will become topping used at the end.

While the pasta cooks, melt 2 tablespoons butter in a saucepan. Add the flour and stir until combined. Cook one minute. Add the milk, salt and pepper to taste. Bring to a boil, stirring frequently. Maintain boil, stirring constantly, about one minute. Remove from heat and add the cheeses. Stir until melted. Mix in the drained pasta.

Pour pasta mixture into a 2-quart baking dish and top with the breadcrumb mixture. Bake at ~350 degrees F until top is lightly browned (I think it’s usually like 25-30 minutes).

If you want to add some color, saute some red & green bell peppers and mix them in when you put the cheeses in.
