All good actresses/actors can portray the emotions neccesary for the film to make it brilliant :)
Although she's been in two homosexual movies, it doesn't make her a lesbian or a bi. She's paid to do it, and she's an actress, so she acts all this. They are professionals and can get really into a character, which is probably why you believed that Piper was Paulie.
When an actor/actress receives a role (the good actors/actresses anyways), they try to get inside of the chracter's head. They create a setting, a background, and a goal for themselves, that is basically the life of that character. After they're done shooting however, they get out of this state of mind and are themselves again.
So although Piper might seem like she is a lesbian since she is so intense in her movies, and so into her characters (and her character's lovers), it is just another role that she is getting paid for, and at the end of the day she get out of that role.
She is very confident with herself, and is comfortable doign things other actresses might have trouble with. Like taking on this role, not many people would exactly jump to the opportunity, but she was comfortable with the part because she knew it was just a job.
