I would definately be interested in all the stuff mentioned on the post so far. I am for kayaking and rafting. I've never kayaked before, however I have canoed on whitewater before so I can probably pick it up pretty fast.
fyi, if we do rafting, something that wasnt mentioned on the pack list is an extra pair of sneakers that you don't mind getting wet.

that or a pair of chacos or tevas probably suit you better then an old pair of sneakers
