Subject: Velvet Mask Balls

Velvet Mask Ball

1 6-ounce package semisweet chocolate morsels

1/2 cup sugar

1/4 cup light corn syrup

1/4 cup water

2 1/2 cups finely crushed vanilla wafers(about 60 wafers)

1 cup unsalted pecans or other nuts

1 teaspoon orange extract

Tinted granulated sugar.

Put water in the bottom of a double boiler and bring to boil.
Put the chocolate morsels in the top of the double boiler and heat over the boiling water until melted.
Remove from the heat. Stir in 1/2 cup of sugar and the syrup. Add 1/4 cup water and blend the mixture well.

Put the wafer crumbs in a seperate bowl. Chop the pecans into very small pieces and mix with the wafer crumbs. Pour the chocolate mixture in. Add the orange extract and stir well.

Shape the mixture into small balls. Roll each ball in the tinted sugar. Put the gift balls in a covered container. (Nancy uses apothecary jars}
Chocolate balls will keep for several weeks , and will taste best after they have "ripened" a few days.
