I have found the best way to deal with multiple currencies, is to take enough currency for 1 tank of petrol in each country but I did that for the larger countries so a small amount in each currency, then take USD & Euro's. USD is much easier to exchange if you can't get hold of the local currency (some don't let their currency out of the country)

But what i used the most was Post Office Travel Money Card:

Load it up with money and use it at cash machines & anywhere that takes mastercard, and you get Post office exchange rates.

Another bonus with the travel money card is that if you get into trouble no cash can be nicked (had it happen to me many times).

Also on another note, make sure you have two wallets for the border crossings, one with a few USD in (1's and maybe a 5 dollar note) that way if you do have to bribe its not going to be a huge amount. again from personal experience loosing out on $100 at the Moldovan border crossing.

Oh and finally if at all possible hand over as little formal documents, give photocopy's of driving licenses, insurance etc. I made the mistake of handing over my driving license at a Checkpoint in Kazakhstan, held us up there for 6 hours in the end he settled for a pack of American fags for my Driving license lol.

Sorry went off at a little bit of a tangent there, but it helps a lot to know.
