Surely there's more going on than just Ole Miss games, and health updates. Anyone got any trivia to share? Down-home pecularities? Recipes?

For recipes, how bout I crank one out, see whachathimk?

A Real Short, Real Simple For Baked Anykinda Fish!

Way back when I was stationed in the Navy in Norfolk, VA, I got whacked by the good Navy doctors with high cholesterol. Well, I got to searching for some recipes for fish, other than frying. I found this tidbit somewhere for baking fish on a grill, and it works as well in a plain, old oven:

A couple of filets
Lemon-butter sauce
Tin foil
Whatever spices you might wish for, I use flaked parsley, for instance. I suppose dill would work, too.

Preheat the oven to 350 F. On a large chunk of tin-foil, lay in a filet or two, and pour the lemon-butter sauce over it, might even flip the filet(s) a time or two to ensure coverage. Sprinkle spice of your choice on top. Starting at the edges, fold the foil over the filet(s), ensuring the foil is sealed all the way around.

Place in the oven for 30 minutes or so. No stirring needed, no over attention.

Remove from the oven, open the foil package, slide the filet(s) onto a plate, grab a brew or some vino, and enjoy!

I just luv catfish fixed this way!

I suppose most any fish could be prepared this way, as the title sez, but boneless, i.e., catfish or flounder, sure makes eatin' mo'betta!
