Well mr Goram....It is a huge topic and every piker believes in different bait so I can only speak for myself mate.
I like sea baits and particularly Herring,Mackerel and smelt.I also often use lamprey and sardines.I think that the added smell of the sea baits is an added bonus along with the oil found in sea bait.
As far as freshwater baits go if I had to stick to one forever it would be the Roach but they all work better or worse on different waters so in answer to your question try and match the bait that the Pike in your water are feeding on. They will generally take any well presented bait though......esecially bloody,oily and smelly baits.
