不少人天天吃熱狗火腿三文治,不知道這些加工食品隱藏殺機:
不但有大量屍毒及農藥,還含有多種致癌物質。為了保命,
還是敬而遠之好。近年越來越多科學證據證實:吃香腸和
火腿令人生癌機會大增。

早在五十年代,科學家已發現亞硝胺這種化學物質會引起肝癌。
在一九五四年,英國一所大學有四位化學家同時患上肝硬化症,
其中一位死去,調查結果,發現原來他們吃過實驗品中的
二甲亞硝胺。兩年後,更多的動物實驗證實:二甲亞硝胺會引致肝癌。

有位德國化學家靜靜在果醬中放進了少量亞硝胺,讓妻子每天吃,
結果她毒發身亡,仍然不知道是丈夫謀殺她。

香腸、火腿、叉燒、臘腸、午餐肉、鹹牛肉等食品的生產過程之中,
都要加進硝酸,它與肉中的血紅素產生化學反應,看起來漂亮呈粉紅色,
而且亦有殺菌保鮮的效用。

這些硝酸吃進了人的腸胃之後,會被分解成為亞硝酸,
跟肉類所含的胺產生化學反應,變成亞硝胺。

中國人本來吃臘腸也不算多,但是近年開始習慣早餐頻頻吃香腸火腿,
等於慢性自殺還不自知。
