They do have beautiful bike trails. I don't know about a bike club personally, but I did find it easily by Googling "sanibel bike club." For a day trip, I would say that Ding Darling is often worth a trip, but so is the SanCap Foundation. Ding is bike friendly, San Cap is hiking trails by the river. Doc Fords, Traders, and many other good restaurants to choose from. Kayaking is also good; I would recommend Captiva Kayak for renting good gear.
