Subject: SUGAR FREE/FAT FREE DESSERTS...

Key Lime Pie
¼ C. water
1 (1/3 oz) package sugar-free lime gelatin
2 (6 oz) containers sugar-free/fat-free key lime yogurt
1 (8 oz) container fat-free whipped topping
1 reduced fat graham cracker crust
In microwave safe measuring cup, heat water on high until boiling.
Whisk in gelatin until dissolved.
In a large bowl, whisk together the gelatin mixture and yogurt.
Fold in the whipped topping.
Carefully spread in crust.
Refrigerate at least 4 hours or until set.
Garnish with thin half-slices or curls of lime zest if desired.

Cappuccino Cups
1 envelope sugar free cappuccino mix, any flavor (i.e. Maxwell House)
1 Tbsp. hot water
1 C. cold skim milk
1 (4oz) package fat-free/sugar-free instant vanilla pudding mix
1 (8 oz) tub fat-free whipped topping
1/8 tsp ground cinnamon
Dissolve the cappuccino in hot water in a medium bowl. Stir in the cold milk. Add the pudding mix and beat with a wire whisk about one minute. Gently stir in two cups of the whipped topping. Spoon this mixture into six dessert cups. Refrigerate 1 hour or until ready to serve. Just before serving, mix remaining whipped topping with cinnamon and place a dollop on the top of each cup.
