Subject: GREEN TOMATO, PEPPERS & CUCUMBER RECIPES...

Hot Green Tomatoes
Make use of those Green Tomatoes
In each pint canning jar, place:
Garlic Cloves (approx. 4)
1 stem of Dill
1/2 tsp salt
1 hot pepper
cleaned, small tomatoes, (quartered, to fill jars)
Bring : 2 quarts of water
1 quart of vinegar
1/2 cup of sugar
to a boil. Boil 5 minutes
Pour over tomatoes in jars, to cover.
Place canning lids on top and tighten rings.
Give jars a hot water bath for 5 minutes
to insure sealing of lids.

Spicey Peppers
3 pint jars
Mix together and boil for 5 minutes:
2 1/2 cups vinegar
2 1/2 cups water
1 1/2 cups sugar
7 - 8 medium peppers--
Clean peppers and slice in strips.
Place peppers in ice water for 5 minutes
Stuff peppers in jars and add:
2 cloves of garlic
1/2 tsp of salt
1/2 tsp salad oil
Pour boiling mixture over peppers and seal with lids and rings.
Give jars a hot water bath for 5 minutes
to insure sealing of lids.

Frozen Cucumber Slices
Yeild -- 7 -8 cups
7 cups of thinly sliced cucumbers 1 large onion, thinly sliced 2 cups sugar 1 cups cider vinegar (dark) 3/4 tsp salt 1/2 tsp celery seeds Boil 2 cups sugar and 1 cup cider vinegarStir well before putting on stove, then bring to a boil for two minutes. Pour over sliced cucs and onions. Add cerery seed and stir well. Refrigerate for 2 days, stirring occasionally.

Pack in containers (I use the small margarine containers).
Be sure to pour juice over the top of cucs to prevent freezer burn. Freeze and when you are ready for a treat with your meal take out a tub of these delicious cucumbers to add to the table!! Of course, you must thaw first! :)

3 Hour Refridgerator Pickles
Yeild -- 2 1/2 quarts
Our family loves them and so will yours!!
6 lbs cucumbers
4 medium onions
4 cups sugar
4 cups vinegar
1/2 cup salt
1 tsp celery seeds
1 tsp mustard seed
1 1/2 tsp ground tumeric
Slice cleaned cucumbers 1/4 inch thick.
Peel and slice onions 1/8 inch thick.
Put these in a large non-metallic bowl and add remaining ingredients.
Stir well for 5 minutes.
Put cucs and onions & juice in canning jars
Cover and refridgerate for 3 hours before serving.
Can be stored in refridgerator up to three months
Stirring occassionally.
