A Bird in the Head (1946) (watch out for that Igor!) and Spooks! (1953) both feature memorable mad scientists with feisty gorillas!

Also Yes, We Have No Bonanza (1939) with Yorick the Burro!

I forgot about Malice in the Palace (1949) with Larry in the kitchen with a dog and a cat. A Stooges classic.
